This bread is perfect for the holidays, with just enough spice, sweetness, and bitter flavors (from chocolate…oh yeah!) to warm your holiday belly.
Ingredients:
For topping:
- 1 Tbsp orange zest
- ¼ cup chopped walnuts
- ¼ cup coconut sugar
For bread:
- 4 eggs
- 1 can pumpkin
- 1 cup coconut sugar
- 1 cup maple syrup
- ½ cup GF oatmeal
- 2 cup 1:1 Flour
- 2 tsp baking powder
- 1 tsp baking soda
- ½ tsp salt
- 1 ½ tsp cinnamon
- ½ tsp ground cloves
- ¼ tsp ginger
- ¼ tsp nutmeg
- ¼ tsp allspice
- 6 oz semisweet chocolate chips
Directions:
Grease a 8.5 in x 4.5 in loaf pan.
Preheat the oven to 350 degrees.
Mix chopped walnuts, ¼ c coconut sugar, and orange rind by hand or in a food processor. Set aside.
In a large bowl, mix eggs, pumpkin, sugar, and maple syrup by hand or with a stand mixer until creamy.
In a small bowl, sift together flour, baking powder, baking soda, salt, cinnamon, cloves, ginger, nutmeg, allspice.
Pour dry ingredients into a large bowl with wet ingredients and mix well. Stir in chocolate chips.
Pour batter into loaf pan. Top with orange zest mixture.
Bake for 60 minutes, or until a metal knife inserted near the center comes out clean.
