Recipes: Edible Heaven Chocolate Chip Cookies

These are the cookies you go for when your kids are having cookies and milk, or some other sweet thing that makes your salivary glands go crazy. Fortified with omega-3s, these cookies will leave you satiated without the crash later.

Ingredients:

  • 1 cup butter
  • 1 cup coconut sugar
  • 1 cup maple syrup
  • 2 eggs
  • 1 tsp vanilla
  • 2.5 cup Gluten Free oatmeal
  • 2 cup 1:1 Gluten Free flour (with xantham gum)
  • ½ tsp salt
  • 1 tsp baking soda
  • 12 oz chocolate chips
  • (1) 4-oz dark chocolate bar, chopped
  • ½ cup walnuts
  • ½ cup chia seeds
  • ½ cup pumpkin seeds

Directions:

Preheat the oven to 350 degrees.

Mix gluten free oatmeal, flour, salt, and baking soda in small bowl, set aside.

In a separate bowl, mix chopped walnuts, chia seeds, and pumpkin seeds, and set aside.

In a large bowl with attached mixer or hand mixer, mix butter, coconut sugar, and maple syrup until creamy.

Add eggs, mixing after each addition. Add vanilla. Add the wet ingredients to the dry flour ingredients.

Add nut mixture and mix well.

Mix in chocolate chips and chopped chocolate bar by hand.

On a cookie sheet, spoon the batter in 1 ½ inch rounds, separated about 2 inches apart.

Bake for 10 minutes.

Let cool completely before storing.
