Recipes: Anne’s Sunday Morning Muffins

Makes 12

In a large bowl, mix:

  • 1 cup flour
  • 1 cup whole wheat flour
  • 2 tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp salt
  • 1 tsp ground cinnamon

Add in:

  • 2/3 cup dark chocolate chips
  • ¼ cup chia seeds

Whisk together in a large bowl:

  • 1 large egg
  • ¼ cup maple syrup
  • 1 1/3 cup mashed ripe bananas (2-3)
  • 1/3 cup butter or ghee (or another high heat oil like coconut)
  • 1 tsp vanilla

Directions:

  • Combine flour mix with the wet ingredients, and fold just until the dry ingredients are moistened. Don’t overmix!
  • Divide the batter among muffin cups.
  • Bake 14-16 minutes.
