Makes 12
In a large bowl, mix:
- 1 cup flour
- 1 cup whole wheat flour
- 2 tsp baking powder
- ½ tsp baking soda
- ¼ tsp salt
- 1 tsp ground cinnamon
Add in:
- 2/3 cup dark chocolate chips
- ¼ cup chia seeds
Whisk together in a large bowl:
- 1 large egg
- ¼ cup maple syrup
- 1 1/3 cup mashed ripe bananas (2-3)
- 1/3 cup butter or ghee (or another high heat oil like coconut)
- 1 tsp vanilla
Directions:
- Combine flour mix with the wet ingredients, and fold just until the dry ingredients are moistened. Don’t overmix!
- Divide the batter among muffin cups.
- Bake 14-16 minutes.
